  13. Get 1 (5.5 ounce) can sliced black olives
  14. Prepare 1 optional - top with cheese and chives

To a large pot over medium heat, add the olive oil. When hot, add the onion and salt. Add zucchini and peppers, celery, onion, garlic, cumin, thyme, bay, salt and pepper, and partially cover. Stir the hominy and broth into the Dutch oven; bring to a boil.

Instructions to make Hominy with Peppers and Zucchini:
  1. Heat olive oil in a pan and add the onions and the jalapenos. Cook until soft.
  2. Add the chopped zucchini, salt and pepper and the Italian Seasoning. Cook for a few minutes.
  3. Chop up the yellow pepper and the orange pepper. Cook for another 2 minutes.
  4. Strain and rinse the hominy. Drain the olives. Add both to the pan. Cook until warm. And add the cilantro towards the end.
  5. Options: 1) use 4 ounces of bacon instead olive oil. 2) use bacon bits 3) use cooked chopped ham
  6. Option - use frozen corn instead.

Add zucchini and peppers, celery, onion, garlic, cumin, thyme, bay, salt and pepper, and partially cover. Stir the hominy and broth into the Dutch oven; bring to a boil. Stir in the zucchini and yellow squash; return to a boil. In a small saucepan, warm the oil and garlic over low heat until the garlic begins to bubble. Add the remaining ingredients to a large glass baking dish and strain the garlic oil onto the vegetables; toss to coat.
