Separate the leaves; stuff the crumb mixture between each. Stand upright in a steamer basket over simmering water, cover and steam. Tightly pack stuffed artichokes together in a large heavy saucepan or Dutch oven. Sprinkle the tops of the artichokes with the juice from the remaining lemon half.

The ingredients needed to make Stuffed Artichokes:
  1. Prepare 6 large Artichokes
  2. Take 2 cups bread crumbs (plain)
  3. Take 1 onion
  4. Make ready 5 cloves garlic
  5. Prepare 1/2 cup granted Italian cheese (parmigiano)
  6. Take salt (not to much)
  7. Get pepper (white) or (black)
  8. Get fresh parsley
  9. Prepare 1/4 teaspoon dry oregano
  10. Get 1/4 cup olive oil
  11. Get chicken stock
  12. Take 1/2 teaspoon anchovy paste
  13. Make ready 1/2 cup pine nuts (Optional)
  14. Make ready 1/4 cup raisins (Optional)
  15. Get 10 chopped green olives
  16. Prepare butter

Best Italian Stuffed Artichokes Healthy World Cuisine. Add enough water to reach the middle of the artichokes. Fill a pot large enough to fit the artichokes with water. Rub the trimmed artichokes with lemon halves then squeeze lemons into the water.

Steps to make Stuffed Artichokes:
  1. Wash and clean artichokes,
  2. Cut off stems (so that they will stand up in the pot). Make sure to cut pointy tips off of all the leaves, and spead the artichoke open with your fingers to get down into the choke, cut out pointy prickly parts using a small scissors
  3. In a bowl mix all ingredients for stuffing: bread crumbs, cheese,chopped green olives, chopped onion and garlic finely chopped, and chopped fresh parsley. Add oregano,salt, pepper,1/2 cup chopped pine nuts, and about 1/4 cup raisins. Add about 1/2 teaspoon of anchovy paste, more or less if you desire.
  4. Slowly pour olive oil onto mixture stirring as you pour. Only use about 1/4 cup olive oil. That should be enough. you want to be able to squeeze mixture in your fingers and have it stick together. But not be mushy, mixture should still crumble.
  5. Stuff the artichokes with the mixture, then set side by side in a pot large enough for them all to fit tightly (so as not to fall over). Pour chicken stock into pot from the side not directly over your artichokes (or your stuffing will come out). Stock should come all the way to top of Artichokes but not cover them.
  6. When cooked..Put a tab of butter on top off each artichoke and a sprinkle of grated cheese..
  7. Cook on a medium heat, for about an hour checking often, make sure not sticking to pot, you may need add more stock from time to time. Lower heat after and hour and cook for another half hour or so, until you can easily pull leaf off of Artichokes that's when you know they are cooked. Ready to eat…

Fill a pot large enough to fit the artichokes with water. Rub the trimmed artichokes with lemon halves then squeeze lemons into the water. Add artichokes and bring to a boil. Cook the artichokes until leaves are tender and you can just peel one away from base. Arrange artichokes upright in the steamer.
