  1. Prepare 51 oz can of sea watch chopped clams
  2. Make ready 4 slice bacon
  3. Make ready 1 cup diced onion
  4. Take 1 cup diced celery
  5. Make ready 3 tbsp flour
  6. Take 3 cup peeled and diced potato
  7. Make ready 1/2 quart heavy cream
  8. Prepare 3 tbsp butter
  9. Prepare salt
  10. Get ground black pepper

Add parsley and milk to potatoes, and stir well. Heat potato mixture, and add onion/flour mixture, stirring constantly until thickened slightly. Stir in clams; and season to taste with salt and pepper. Drain off all bacon fat but enough to coat the bottom of the pan.

  1. Drain clams and save the juice
  2. Saute bacon
  3. Remove bacon and leave the bacon grease in the pan
  4. Add butter to bacon grease
  5. Saute onion and celery
  6. Slowly add flour stirring constantly for 3 minutes
  7. Add potatoes and clam juice simmer until potatoes are tender
  8. Add clams and cream
  9. Simmer until hot
  10. Add salt and pepper

Stir in clams; and season to taste with salt and pepper. Drain off all bacon fat but enough to coat the bottom of the pan. Add the clam juice, salt and pepper, thyme and chopped parsley. New England Clam Chowder is white (thanks to the addition of milk or cream), and has a thick, creamy texture. It traditionally includes potatoes, onions and salt pork or bacon.
