The main ingredients consist of panang red curry paste, coconut milk, peanuts (or peanut butter) and fish sauce. It can be a little spicy but is generally milder than most Thai curries.

The ingredients needed to make Sweet Panang Curry:
  1. Take 1 tbsp vegetable oil
  2. Take 2 lb chicken breast, thinly sliced
  3. Take 1 lb extra-firm tofu, pressed, thinly sliced (sub for chicken)
  4. Take 1 green bell pepper
  5. Get 1 red bell pepper
  6. Get 1 onion
  7. Make ready 4 cloves garlic
  8. Prepare 2 tsp fresh ginger
  9. Prepare 2 cans coconut milk (1 light, 1 full fat)
  10. Take 2 tbsp panang red curry paste
  11. Prepare 2 tsp cornstarch
  12. Get 1 tbsp fish sauce
  13. Prepare 1 tbsp lime juice
  14. Take 1 tbsp peanut butter, creamy
  15. Take 1/4 cup brown sugar
  16. Get 1/2 cup basil

This is a coconut-based curry that has a nice spicy kick. Non-traditional vegetables add great texture and flavor to an already fantastic flavor. Best served with rinsed and steamed basmati rice. This rich panang curry is what we like to call a "weeknight curry", packed with flavor with only a few ingredients.

Steps to make Sweet Panang Curry:
  1. Slice peppers and onions into thin strips. Mince garlic and ginger.
  2. Slice chicken and/or tofu into thin strips.
  3. Begin cooking rice.
  4. Heat oil in large Dutch oven. Saute chicken and/or tofu until no longer pink.
  5. Add curry paste and peanut butter and stir to coat and flavor the proteins.
  6. Add garlic and ginger and saute 1 more minute.
  7. Shake cans of coconut milk vigorously to incorporate the fats.
  8. Add peppers and onions to the pot and saute briefly to maintain some crunch!
  9. Stir in 1.5 cans of the coconut milk. Whisk cornstarch into the remaining half can with a fork, then add to pot.
  10. Simmer for 10 minutes until the chicken is completely cooked and the sauce begins to thicken.
  11. Stir in sugar, fish sauce, lime juice, and basil. Simmer a few more minutes.
  12. Season with salt and pepper to taste. Serve over rice.

Best served with rinsed and steamed basmati rice. This rich panang curry is what we like to call a "weeknight curry", packed with flavor with only a few ingredients. Kaffir lime leaves are used throughout Thailand- they bring a rounded citrus note and are an essential ingredient to this dish. But Panang curry is all about the peanuts, and it is the only one of the five main curries to incorporate them. This ingredient imparts Panang curry with a nutty, mellow flavor and texture that is distinct from other curries.
