  8. Repeat steps 6 and 7 until all dough is finished. Strech the circles accordingly as you do so, to make them uniform
  9. Once this is done, press down lightly, cover with a cling flim and freeze for 30 minutes
  10. Remove from the freezer and roll out dough into an even circle
  11. Cut the dough into 12 equal pieces
  12. Make a small incision on the broad end of each piece, place a piece of chocolate then roll up from the broad end towards the tip
  13. Place on a parchment paper covered baking sheet and allow to rise in a warm place for about 2 hours.
  14. Brush egg wash(egg plus milk)
  15. Bake in a 180°c preheated oven for 20 minutes or until they become golden brown

Rotate the pans halfway through baking. Remove chocolate croissants from the oven and place on a wire rack to cool for a few minutes before serving. Or if you want to experiment, try marzipan and sliced almonds for almond croissants, jam, or even ham and cheese for a savory version. These little croissants go fast and are perfect for mornings, parties or your next coffee break. Make a batch, throw them into a basket and watch them go.
